“Candied” Ginger & (sugar free!?!) Syrup
1 c water
1/2 c local honey
1/4 c stevia
Bring all ingredients to a boil, simmer down into a syrup, stirring occasionally. The longer you simmer the more concentrated the syrup will be, I simmer for about 1 hour (watch closely!!). Drain out ginger & lemon, store syrup in fridge for about a week. Place the ginger in a dehydrator or set out to dry, then add to hot water for a sweet ginger tea, or eat plain, add to baked goods….the syrup is delicious in hot/sparkling water, cocktails, juices, drizzled over fruit salads, yogurt, etc. Warms the soul!
